grilled tofu 1 block
negi / Japanese long onion 2 stalks
shirataki noodles 200 g (7.1 oz.)
enoki mushrooms 80 g (2.8 oz.)
shungiku / chrysanthemum leaves 100 g (3.5 oz.)
beef tallow or vegetable oil : as needed
eggs : 4
Kikkoman Soy Sauce :100 ml (3.4 fl. oz.)
mirin :100 ml (3.4 fl. oz.)
sugar: 4 Tbsp
water: 100 ml (3.4 fl. oz.)

Step 1
Prep: Cut beef and grilled tofu into bite-size pieces. Slice long onion diagonally (1 cm thick). Parboil shirataki noodles, then cut shorter. Trim and halve enoki/shiitake mushrooms. Cut shungiku into 5 cm lengths. Mix sauce (A).
Step 2
Cook: Melt beef tallow (or oil) in hot pot over medium heat. Sauté onion until fragrant, add beef, then drizzle sauce (A) in a circular motion.
Step 3
Simmer: Reduce heat, add remaining ingredients, and simmer until cooked through. Flip tofu halfway to absorb flavor.
Step 4
Serve: Optional—dip bites in raw beaten egg before eating.
