cooked rice (480 g / 17 oz.) for 2 bowls
beef (thinly sliced): 180 g (6.3 oz.)
onion: 1/2 bulb
kaiware / daikon radish sprouts: as desired
pickled red ginger / benishoga: as desired
water: 200 ml (6.8 fl. oz.)
Kikkoman Soy Sauce: 2 Tbsp
sake (cooking sake): 2 Tbsp
mirin: 2 Tbsp
sugar: 1 Tbsp

Step 1
Prep: Chop beef into bite-size pieces. Slice onion 5 mm thick.
Step 2
Cook: Combine sauce (A) and onions in a pot over high heat. Once boiling, add beef in a single layer. Return to a boil, skim off scum, then simmer 6–7 minutes over medium heat.
Step 3
Serve: Ladle rice into bowls, top with beef and onions plus cooking liquid. Garnish with daikon sprouts and red pickled ginger (optional).
